@Eidon @Meandres fwiw, I would put in the に because it sounds a bit odd otherwise. Without the に, just ここは would work for example ここはいい喫茶店です "this here is a good coffee shop"
But your sentence has the meaning, the coffee in this place is delicious, so the に says "in".
You could also say ここのコーヒー, "this place's coffee"
