I use several techniques, and I'm sure there are a lot more. And right, it is quite possible that I'm not blocking all of them, but it is one of my duties to try my best. What you are asking here is that I stop doing one of the duties I have as an admin.

For every request from a search engine (already questionable), there are tons of other requests pretending to be search engines. I try my best, even with the contents in here being public, to stop automatic profiling of the accounts.
So, sorry, but no, I can't change robots.txt settings.
If you want to increase the visibility of your posts, I suggest linking them from other sources (webs, other social media, promoting your account in person, etc).

Don't worry about breaking anything, as I keep backups of everything, and I don't test these changes in production.
I'm sorry, I have no idea about mobile experience, as I don't own a smartphone. I do use an Android virtual machine from time to time, so I could test it there if necessary.

@gnusocialjp In my opinion, anything but Google Analytics would be desirable. Maybe Matomo (https://matomo.org/) would be a better option.
Besides that, there is this proposal for Gnusocial v3: https://notabug.org/diogo/gnu-social/issues/227
There was also a "SocialAnalytics" plugin by Chimo, but I can't find it online anymore, and it does not work with v2.
