They'll ask you to do *some* religious thing today, whether that's wrapping tefillin, taking a shabbat candle, taking a holiday relevant item (etrog, etc.)
They're from a group called Chabad. It's hard to explain what/who they are but they're a sort of Jewish sect or offshoot.
Basically, it's a mitzvah to help a Jew do something religious, so they do.

Then when you say you haven't, they will tell you how quick it would be, etc.
Basically it's their way of trying to get Jews to be more religious and also score some quick mitzvah points.
I've suggested other mizvahs like helping me with my groceries and they've never said yes...
